Super Addicting GF Raspberry Jam Dots (Can use Blueberries)

Makes 12 cookies
1 cup almond meal
1/2 cup gluten-free oats
1/4 cup coconut flour
6 tablespoons grass fed butter or ghee (melted)
1/2 cup coconut sugar
1 tablespoon maple syrup
1 teaspoon baking powder
1 teaspoon vanilla extract (or my fav, this vanilla bean powder)
juice sweetened jam of your choice for the filling
Preheat oven to 350 and line a baking sheet with parchment paper.
Form mixture into thick cookie patties and gently push into the center to make thumbprints.
Bake for 10-15 minutes, remove and add jam to the middle, and bake for another 3-4 minutes.
Let cool for a few minutes (and if you can handle it, a few hours). I think these taste so much better the next day after sitting out and getting a little crispy.
